So, about this game, I tried out the demo and found myself wallowing in the wealth of options. What did you find to be the best mix of meddling for your tastes?

Sorry for the delay...if you're still here that is....
I too was a bit confuzzled when I first started playing. There is so much to look at and do it's easy to get lost. As I mentioned the "documentation" is more of a 10,000 ft. view of the game, not a step-by-step analysis of all the components that are there. I haven't even touched the play package editor yet...leave that alone til you get a grasp of what your doing. I like to GM so I sim all the games then make roster changes where necessary. It makes it a little easier to swallow that way...plus when I tried calling my own plays I would get steamrolled everytime.
Focus on GM-ing and look at player contracts, Free Agents and the Draft. After a season or two you'll get the hang of alot of it then you can jump into coaching if you like to do that.
A few important notes. The pracitce schedule has zero bearing on anything. The developer has said so on their message board, so ignore it. And as in real life, draft picks (especially high ones) are golden. Try trading some of your aging or disruptive stars to sucky teams for their 1st rounder if you find you're going nowhere fast during the season. And don't trade yours!
Lastly, beware the salary cap. Don't go hog wild with signing bonuses or it will come back to bite you and ruin your franchise for a few years. Dead $$ = Dead Team

Two related questions then. I'm familiar with the basics of how to run a football team, but it is quite time consuming to rememorize imaginary player names. When downloading the real player names, are the evaluations accurate to real life?
Also, is there any way to run this game in linux?

I'm not sure if it will run in Linux as I have XP.
Your best bet is to go to the official message board and look around. There is everything you want/need to know about the game.

I did import the NFL rosters and they looked accurate to me. But all those names will be gone in a few years as you proceed. I get to know the new (fake) names fairly well just from looking at the roster and making lineup changes and what not over the course of the season(s).
